Vegetarian Slow Cooker Recipes - can anyone share any?

Please. Have just got a slow cooker but need vegetarian recipes.

I thought slow cookers were just for meat. All the vegi recipes I've ever seen have been pretty quick to cook.

Have done lentils in there a lot.

Ooh amliking the chickpea recipe - will deffo try that. I do lentil soup in mine a lot. Veggie chillis and curries. I am thinking of trying a tagine in it - do you think that would work?

What's the man benefit of a slow cooker with veggie food? Is it cheaper to cook? Can you use e.g. dried chickpeas without soaking? Is it tastier?

(I have a £15 Argos voucher and am actively looking for something, nay anything to squander it on )

veggies and couscous, mid eastern style. bung any root veggies you have in the house (potato, sweet potato, carrot, butternut squash etc), cut up into large chunks, courgettes, cabbage, and lots of onions into the slowcooker with veggie stock, paprika, garlic, and cumin (you can add a half a lemon if you want) cook for hours in slow cooker on low till half of the liquid has boiled away, add a tin of chickpeas and serve the veggies and "soup" over couscous

Yum - that sounds lovely Naomi. It's similar to a Madhur Jaffrey recipe that I do in the oven.
