Can I freeze fairy cakes?

Yes, but don't ice or fill them until you are ready to use them.

Super - so I can leave them in their paper cases, whip them out of the freezer and ice them that morning.

May I ask: how long do they take to defrost? Overnight?
Also, do frozen fairy cakes last as long once defrosted as freshly baked ones?

Would it be OK to defrost overnight on Saturday, ice on Sunday to serve Monday?

I'd ice them while frozen - that way you avoid getting cake crumbs in your icing.So, if serving on a MOnday, would take them out on Sunday evening (or even Monday morning) and ice whilst frozen.

(if at room temp, they will defrost in next to no time. An hour or two max)
