Roast lamb not big enough

I invited some of dh family for lunch tomorrow. I have a lovely deboned, marinated leg of lamb in the freezer which I want to use. With 4 adults, one (hungry) pre- teen and 2 children who love meat, 1.2kg felt OK - although I was going to do a packet of sausages as an extra, for kids mainly. But now we have another (meat loving) adult coming and it is starting to feel less OK. I could absolutely bulk up meal with more sides. But this is sort of a delayed easter meal and I feel like I want generous meat portions.

Do i:

Leave existing lamb in freezer and buy a new, bigger joint?
Or
Buy a second smaller joint to have alongside (but will be different as existing one is marinated, organic, from a farm etc
...)
Or
Do some other meat accompaniment?!

I'd cook something different altogether and leave the lamb for when it feels like a generous amount. If it looks like there's not enough that's what people will remember, not how delicious the bit of lamb they got is.

I would buy another joint. Save yourself the stress of faffing about. Have the joint in the freezer another time.

Cook something else to go alongside it. Not having enough is awful. As a host I like to have too much rather than not enough. Do extra potatoes, pasta salad, French stick etc aswell.

British Lamb isn't really in season at the moment though, the last of last year's lamb will have gone in the easter trade and this year's lamb won't really be ready until late summer. If you stick with lamb anything you get will probably be imported if that kind of thing matters to you?

Buy a shoulder of lamb and cook it long and slow, until it is falling apart. Serve this alongside the leg as a different choice.

google the many recipes for 12 hour lamb and enjoy your feast.

bigger joint or different meal entirely. If you’ve got time you couple do slow cooked shoulder - cheaper than leg and integrated stovies

I'd buy another joint to go with it. When they're carved and mixed on the same plate, no one will know which is which.

I would either get another joint of lamb (shoulder as pp’s have said) or joint of beef as well.

I would get a second option to have along with the lamb, maybe a small roast chicken or a ham joint to have a second option.

I would go for a shoulder of lamb slowly cooked and carved on the plate with the original lamb you have,do you have an electric carving knife it will make the meat go further you can bulk it up with stuffing balls on the serving dish . Best of luck.

Are you set on having a roast? you could use the lamb and sausages to make a cassoulet, optionally add in some other meats.

if you do want a roast, i'd buy a second joint to ensure you have enough. Use any leftovers to make shepherd's pie.

Bugger, looks like another joint it is. I was really looking forward to the one i have - but agree, nothing worse than looking stingy and I actually don't want the effort of making a.million sides. Back to the supermarket I go.

I do want lamb but agree with the powter who said I might not get the best options now. I might have to swap to beef. Although I did that for Xhristmas. I would do.shoulder except dh doesn't really like it and SIL has huge issues with fat so I think that wouldn't work.

Could you buy some lamb leg steaks - one per person and cook them separately so there's a a steak and a slice or two each. Any leftovers for a family meal during the week.

If SIL has huge issues with fatty meat and DH doesn't really like it why don't you do the lamb as planned as well as a chicken or ham?

Well she didn't say what else she was doing with it. Roast potatoes and veg isn't going to be enough if there's minimal meat.

So I was assuming she was going to do other accompaniments for 7 people. I know not what to suggest.

When we have a large family get together we have huge buffet, most foodstuffs, just so there is enough to go round!

Buy a second organic joint and marinate it yourself. All meat comes from farms.

Buy another joint as it’s simply easier.

Or make lashings of a decent stuffing that will work well with the lamb, masses of roast potatoes, parsnips etc and you may be ok if the children major on sausages

I think getting a second smaller joint to serve together might help. Leafy salad, roast potatoes or baked wedges, glazed/roasted whole carrots, buttered green peas, maybe some caramelised onions, asparagus, perhaps some dauphinois potatoes and copious amounts of gravy.

There's 1.2k of meat, plus sausages. Stuffing, roast potatoes, mash, creamed leeks, parsnips, swede, carrots, spring greens, gravy (Yorkshire pudding here with every roast).

Loads of food. But I would do a chicken too for SIL

Yes always yorkshires and stuffing no matter what the meat is. We do red cabbage, green veg, carrot and swede mash and cauliflower cheese as well as roasties.

I would just get an extra piece of lamb, you can marinade it overnight.
