Roast lamb not big enough

I invited some of dh family for lunch tomorrow. I have a lovely deboned, marinated leg of lamb in the freezer which I want to use. With 4 adults, one (hungry) pre- teen and 2 children who love meat, 1.2kg felt OK - although I was going to do a packet of sausages as an extra, for kids mainly. But now we have another (meat loving) adult coming and it is starting to feel less OK. I could absolutely bulk up meal with more sides. But this is sort of a delayed easter meal and I feel like I want generous meat portions.

Do i:

Leave existing lamb in freezer and buy a new, bigger joint?
Or
Buy a second smaller joint to have alongside (but will be different as existing one is marinated, organic, from a farm etc
...)
Or
Do some other meat accompaniment?!

Either - another joint (fine to have one marinated and one not), a slow cooked lamb dish, or - as others have said - do a chicken (“I know not everyone likes red meat…..”).

What’s with all the salad …. with a roast 😳

And stuffing, with lamb.

AtomicBlondeRose · 22/04/2023 10:21

Just do a different meat as well. Even a chicken or a ham joint! It’ll go fine with the rest of the meal and make it seem more of an occasion. We always have two meats at Christmas and it’s great.

Why wouldn’t stuffing go with lamb?

Apricot stuffing is wonderful

TheChosenTwo · 22/04/2023 10:25

New, bigger joint of lamb or something else entirely. We have some really nice farm shops and great butchers within a few miles of us so spoiled for choice.
I’d rather massively overcater than have anyone feeling underfed or short changed! No one leaves my house hungry.

keepingsanity · 22/04/2023 10:30

Make it a Greek type meal, add pita, olive's hummus maybe some rice or toast potatoes and dolmades and Greek salad

twilightcafe · 22/04/2023 10:34

Buy a second joint.

BelindaMelinda · 22/04/2023 10:35

I would just get another, 'simpler' meat as a second. A chicken or a turkey crown or a small piece of beef.

I LOVE lamb...but what I love more at 'big' or special meals is a selection. I'd be delighted with mainly lamb but would still add a slice of beef or turkey to my plate and that would enhance the meal for me, not detract from the lamb.

SpaceOP · 22/04/2023 10:46

I really didn't want to do a big complicated meal otherwise I would bsolutely do the second meat amd/or extra sides. I don't mind entertaining and enjoy cooking but it's been a long week and to be quite Frank, dh's family, lovely though they are overall, will turn up without so much as a box of chocolates from co op and we certainly never get invited back. I genuinely don't mind anymore but one of the ways I have learnt to not mind is by making lovely meals that also don't involve huge amounts of effort from me because that used to make me resentful.

So a big joint, roast potatoes, some carrots and/or peas and Yorkshires (because my dc would be outraged without them) and I consider myself done.

Need to make the point that surely dh needs to sort this?

FawnFrenchieMum · 22/04/2023 10:50

I’d get a second type of meat, probably beef and serve some of each.

I dont know why someone has to post this on every type of thread of this nature. Presumably most families/couples run their households and divide up tasks and chores according to how they run their house, they dont need some random on MN making suggestions about who should do what.

MartinFowler · 22/04/2023 11:09

"So a big joint, roast potatoes, some carrots and/or peas and Yorkshires (because my dc would be outraged without them) and I consider myself done."

Do that then with the sausages. It'll be fine. For me peas and carrots is not enough veg anyway, a pile of meat wouldn't compensate for that. I love all the trimmings.

BabychamGlass · 22/04/2023 11:21

Go wild, have TWO pasta salads.

On the basis of that agreed - bung some more sausages at the issue

Mammyloveswine · 22/04/2023 11:38

What about picking up a rotesserie chicken and serving that alongside? Then you won't even have to cook it.

Mammyloveswine · 22/04/2023 11:40

Or whack a gammon joint in the slow cooker and then serve that alongside?

My kids don't like lamb so I do this when we have lamb!

Make life easy - Aunt Bessie’s roast potatoes and Yorkshires are fine, their roast parsnips are fantastic, add some frozen peas and that’s your whole meal.

I would get a second option to have along with the lamb, maybe a small roast chicken or a ham joint to have a second option.

That's what I would do if you have the oven space. My friends mum did pork, beef and chicken roast in a standard oven for a meal the day after her wedding for about 15 of us! Lots of potatoes and Yorkshire puds and afters

Well it isn't traditional is it? You don't stuff lamb like you do chicken or turkey. So naturally you have stuffing with those as part of the process. Sure, if you want to make stuffing with lamb nobody can judge you but it's not traditional.

NutButters · 22/04/2023 12:09

I would do slow cooked beans with rosemary and garlic.

Of course it bloody is?! You stuff the leg of lamb where the bone was and tie it with string Confused. It is a classic way and traditional way to cook it.

A stuffed rolled joint lamb is a pretty traditional dish in the UK surely? Though I’m not sure about sausages with lamb!!

It's very traditional.

Sausages aren't but they're a good solution for the OP in this instance.
