what can i do with mackerel?

Any suggestions. I've never cooked mackerel before but want to give it a go - something either baked or pan-fried and not too fussy. What goes well with mackerel - chilis? capers?

grilled mackerel is lovely just as it is - roast some little cherry tomatoes and sautee a few potatoes

Sorry, I probably should have said but DH won't eat tomatoes. But anyway, do you need to do anything to it before you grill it? Brush some olive oil on it, season it?

What if instead of tomatoes I sauteed some onions, red peppers and chilli to serve with it?

that would be fine sugarmagnolia. you coudl put the oniony goo inside the fish when you grill them

can't do the parma ham thing either but I might try putting the 'oniony goo' inside it then grilling it. Do you need to brush the outside with olive oil before you grill and how long do they need to cook for ?

difficult to say wrt timings but about 5 mins per side, keep turning so they don't scorch too much. the test is to stick knife in at thickest part and see that the flesh has changed colour and isn't bloody. i think mackerel needs lots of lemon too as it's quite oily.
