Freezing fresh vegatables...how??

So I love my weekly veg box and all the things that it stands for, i.e. seasonal, organic, etc. etc. BUT when here are weeks when either I'm away or our or when DH is away or out, we end up with loads of spare stuff - notably root veg like parsnips, beetroot, swede, etc.

Depending on quantity, I often give some to my elderly neighbours but I'm also thinking that it would be great to have a stock of this kind of veg in the freezer. Problem is, I have no idea how to go about prepping veg for freezing - do I just lob it in there raw, but peeled and chopped or do I need to blanche it first?

Anyone else have an idea of what to do?

Shameless bump - surely someone must know the best way to freeze veg???
