We had a roast chicken yesterday, so I stripped the meat off and boiled up the carcass for stock. Boiled the stock with a celeriac (46p special offer from Tescos) and a leek (what, 15p?) and whizzed it up. Thinned down with water and milk, added the chicken strippings(well would have if I hadn't eaten them all) - so, dinner for me and dh with leftover baguette from yesterday, all in all, well under £1!

BEAT THAT!!

Once I nearly burnt the house down boiling chicken bones for stock.

What, no pudding afterwards, Captainmum?

Pudding for 10p....? A bit anoyed at the mo cos ds3 who's 11 today specifically asked for Birthday chocolate Brownies for afters, and then just said he was too full up. (Spent the time between school hometime and dinnertime stuffing toblerone.)

I used up the cold roast beef making Chinese beef in oyster sauce yesterday. Personally I thought it was delish and a good way to use up leftover beef (dc don't like it cold) but ds (age 7) turned his nose up.

I've been on a mission since Xmas to use up the leftovers from Sunday's roast on a Monday night. Prior I had NEVER used leftovers, ashamed to say I always chucked them.
I have done some lovely chick/veg/rice in stock in the oven, and done beef stir-frys. Was at a bit of a loss with the pork and the lamb so they weren't very nice.
Anyone have any other ideas for leftovers?

The leftovers from a chicken are always great in a risotto, I strip it and cut into small pieces to chuck in towards the end, then boil the carcass with veg to make stock.

Springlamb - left over lean pork doesn't last long in this house - cube or shred it and add to wok with peppers, mushrooms etc and cooked rice, 5 spice powder, soy sauce and sweete chili sauce. Lovely spicy stir fried rice with lots of crunchy veg
