Dinner Party tomorrow - looking for ideas for a main course?

Going to do salmon moose starter, and they are bringing dessert. Just need something tasty for the main course, tried and tested. Any recipe suggestions please?

How posh or casual and how well do you know these people ?

Good friends, but they like their grub quite posh (personally, give me a curry any day.

What about lamb tagine? Or beef wellington?

Organic breast of chicken in a smoked garlic sauce with new potatoes and seasonal veg. ??

I posted a garlic chicken with herbed pots on the receipe section which is yummy - salad crusty bread and wine.
