how long do I roast beetroot for?

Wrap them in foil and roast for, I think, about 40 minutes. They do take a while to cook.

Why not have a go and see at 30 minutes if they're cooked or not?

Don't bother with the foil, put them whole in the skin on a baking tray and after 50 minutes or so they should be done.
It's much easier and less messy to peel and slice them once they are cooked

you can microwave them and they are really very good. stab them a bit first and put in something glass with a lid. just try a min or so on high at a time until they are done turn them round as well or some bits can sort of fossilise if overcooked.
