I'm not a big fan of cauliflower but bought one anyway, just to see what I could do with it. My mum used it 2 ways - attached and served plain, or in a soup with brocolli.

What do you do with a cauliflower?

I've never made it but cauliflower rice is meant to be a healthy option...
cauliflower cheese is also a tasty side dish though I'm not so sure it is healthy!

Whole roasted, or in florets? We like brocolli roasted so I'm game for that.

I roast it with olive oil and black pepper, cut it into big slices (1/2 inch thick) or break into florets. Takes 30 mins to cook, I like it to colour a bit.

Cauliflower cheese (mix with broccoli?)
Cauli rice
Cauli shawarma - think i found recipe on here but partly boiled , covered in spices and bbq - top with pomegranate/ tahini type dish - really delicious.

Cauliflower takes flavours really well. Our favourite is to brush it in harissa and roast it, then serve with a little Greek yogurt. It’s also lovely marinated in some herbs and lemon before roasting.

Roasted!

I had a really good salad at a cafe the other day with big florets of beautifully seasoned roasted cauliflower, giant couscous, harissa, various other bits and bobs (something green, I forget exactly what…fine beans?). Anyway it was fantastic.

Thanks. I thought about cauli cheese but I csnt see anyone else eating it....its macaroni cheese or death. Roasted sounds really nice though. I've got leftover Korean chicken breast for dinner tonight so I wonder if I could coat florets in panko crumbs, roast it and then have a dipping sauce on the side, sweet chilli maybe.

Harrisa is a great call...I've got that too. And preserved lemons and couscous.

I need to add flavour cos all my memories are of it being so bloody boring..

Thank you, that sounds like one I have to bookmark.

The smell of it cooking.....bleucht. I'll def try roasting it. We're stuck in a rut with food so I'm trying to shake us up a bit.

Delia Smith has a recipe for cauliflower and broccoli roasted with crushed coriander seeds and garlic . Delicious!

I like it roasted. My favourite cauliflower recipe though is Jamie's cauliflower risotto, served with a lovely toasted breadcrumb topping. The cauliflower goes really soft and mixes in with the rice.

Definitely crumb it! I blanch then coat in a mixture of Stilton and breadcrumbs. It's absolutely devine.

If your family like macaroni cheese, you can do a mixed macaroni and cauliflower cheese, all in one dish. However I agree with others that roasted cauliflower is delicious! If you have time, try par-boiling then roasting the whole head (I use an Ottolenghi recipe, but it takes 90 mins)

I'm the only Stilton lover in the house, but that sounds really good. I'd never have thought of that. Would it reheat? For lunch the next day? It may be less crispy but I can live with that...

Cauliflower curry. I will be making it later, this is the recipe I am using, it’s a Waitrose magazine one. I don’t always have the right ingredients, so won’t be using the curry leaves, or yogurt because I don’t have them in, I will also be using frozen ginger, garlic and red chilli.
