We got some of these in our veg box this week, and I have no idea what to do with them.

Anyone?

In fact if there wasn't a list of what was in the box I wouldn't have known what the hell they were.

Soup or roasted or gratin is all nice. But I've been converted by this recipe which is v tasty indeed...

i don't know what you do with them but have heard they can give you bad wind

LardyMardyDaisy · 07/02/2008 11:09

lol lucykate, I just found this

"NUTRITION
Jerualem artichokes are very rich in inulin, a carbohydrate linked with good intestinal health due to its prebiotic (bacteria promoting) properties. These health benefits come at a price; the food can have a potent wind-producing effect.

Jerusalem artichokes also contain vitamin C, phosphorus and potassium and are a very good source of iron."

Maybe not as I'm still BFing

super tasty gratin

  1. peel slice and put in oven proof dish rubbed with garlic and butter

  2. bring 1 cup milk to boiling point with 6 cloves. leave to infuse 10 mn, remove cloves.

  3. make 1/2 pint stock (chicken stock cube) / mix in milk + knob of butter.

  4. pour on jerusalem artichokes and bake 40mn

'Tis true about the wind. Don't have them the night before an important interview. They are lovely though.
