Who ate all the pies?

Pies, pies. Get yer' veggie pie and tart recipes here please!!!

Dp is a meat and two vege traditional man; I'm veggie. Please could I have recipes for veggie pies and tarts that will con him into thinking he's had a "proper meal" when served with potatoes and vege, or salad and baked potatoes etc.

If these recipes avoid mushrooms or aubergines, even better.

Cheese and Onion Pie?

Ingredients

Serves 6
285g/10oz good, strong Cheddar cheese, coarsely grated
30g/1oz unsalted butter
1 large onion, peeled and chopped finely
110g/4oz potatoes, peeled, steamed and diced
2 large eggs
4 tbsp double cream
a sprig of thyme or a bunch of flat-leaf parsley, chopped
pinch of cayenne pepper
sea salt and black pepper
shortcrust pastry made with -
340g/12oz flour and 170g/6oz unsalted butter
beaten egg for glaze

Preheat oven to 220ºC/425ºF/Gas 7.
Divide pastry into two balls, keeping one a little larger than the other.
Melt butter in pan,gently fry the onion until soft. leave to cool.
Put onions in a bowl with grated cheese, potato, eggs, cream, thyme/ parsley and seasoning. mix thoroughly

Roll out larger ball of pastry and line shallow greased 23cm/9in tart tin.
Tip cheese and onion mixture into pastry shell.
Moisten edges of pastry and cover with rolled-out top piece, crimping the edges together.
Brush beaten egg over top and bake ~ 30 minutes until crisp and golden.

Root Vegetable Pie

This may have come from an MNer but am not sure who

Ingredients
2lb / 900g root veg (e.g. carrots, turnip, swede, potato) cut into chunks
8oz / 225g leeks, cut into chunks
For the sauce:
7oz / 175g cheese e.g. cheddar or lancashire & parmesan, grated or crumbled
1 med onion, finely chopped
1 dessertspoon of chopped fresh sage
1½ oz (40 g) butter
1½ oz (40 g) plain flour
1 pint (570 ml) milk
1 level tablespoon wholegrain mustard
packet of ready made puff pastry (or you could make your own shortcrust pastry)
a little milk for brushing
Method
Preheat oven to gas mark 7, 425F /200C.

Steam or boil the chopped vegetables for about 20 minutes or until tender. Tip them into a bowl to cool.

Make the sauce - melt the butter, add the onion and cook slowly on a low heat for about 2 minutes - the onion should go all soft and translucent, try not to let it brown. Using a wooden spoon, stir in the flour so it absorbs the melted butter, then add the milk a little at a time, whisking after each addition if lumps are forming. Season with salt and pepper, let it cook for a few mins on a low heat stirring all the time. Add the grain mustard, cheese and sage. Turn off the heat.

Mix together the vegetables and the sauce and pour into an oven dish. Roll out the puff pastry into a sheet the size of your oven dish and place carefully on top of the vegetable and sauce mixture. Crimp around the edges of the pastry with a fork (or your finger and thumb) so it seals the edge of the pastry to the rim of the dish, so the filling doesn't bubble out whilst cooking. Brush the top of the pastry with milk (or a little beaten egg) to make sure the pie browns. Cook for approx 20-30 mins in the centre of the oven, or until the pie is bubbling hot and the pastry golden brown, puffed up and crispy.

Onion Pie

1 package of puff pastry sheets
6 medium onions (chopped)
butter
3 eggs
3 tablespoon flour mixed with 1/4 teaspoon baking powder
1 small container of sour cream
1 bag of onion seasoning
salt
pepper
nutmeg powder

Thaw pastry sheets at room temperature (approx. 30 minutes). Preheat oven to 375*F.

Unfold pastry sheets and place in pie plate. Trim edges and lightly press pastry around rim of pie plate.

Heat butter in pan. Add onion and cook until golden. Remove onion and let it cool.

Add all the ingredients to the onions and mix carefully.

Pour mixture onto the pastry sheet and decorate the pie with some of the left-over pastry sheets.

Bake for 40 minutes or until lightly browned.
