how do I cook red cabbage?

Help please....... I bought a small red cabbage for us to have with our roast chicken tonight. I usually just steam it in the same way as I would a white cabbage - but I just wondered if anyone could give me a more interesting way of cooking it? Thank you

boil it until tender or however you like it.

We had this with pheasant the other night and it was deeelicious!

1 red cabbage, shredded
1 onion, finely choped
75g beef dripping or other fat
2 Tbsp brown (or white) sugar
1 apple, chopped
3 Tbsp red wine/cider vinegar
300ml beef stock
1 Tbsp flour
4 Tbsp cream, sour cream or creme fraiche

Cook the onion in the fat until it starts to colour. Add sugar and stir till golden. Add the cabbage + apple, then the vinegar and some salt + pepper. Cover + cook for 15 mins on low heat.
Add the hot stock and cook for a further 2 hours Cream the flour to a paste in a cup + add in stages to the pot. Taste + add more vinegar/sugar as preferred.

Sounds like a faff but it was sooo worth it... I had enough leftovers for another 4 servings which I then froze.

Braised slowly with red wine, vinegar, cloves, a little sugar, onion and apple is the only way to make red cabbage palatable IMO.

Whenever I have tried to do something fancy with red cabbage it all goes a bit pale! How do you get that glossy deep red finish?

I am going to try PinkPussyCat's recipe tonight. Not sure what with at the moment - maybe just on it's own it sounds so good!!

(Apparently in order to keep the colour you need to cook it in something acidic, hence the vinegar... sorry poncing again!!)
