Interesting things to do with sweet potato please?

Have bought some. Only managed to get as far as pureeing it last time for weaning. What else can I do with it? Anyone got any recipes or how to's for mash, chips etc

Cut it into wedges, sprinkle with a little olive oil and roast. You can sprinkle some paprika over for a little added pizazz.

To make mash I just cut it into biggish cubes, boil and mash with butter.

You can also bake them like a baked potato in the oven or in the microwave and then just fork in a knob of butter at the end.

Mine like it mashed up with cheese and onion (diced and fried). Sometimes I fry it as little cakes, other times just give it to them as it is. They both love it as wedges with ketchup for dipping. DD (3) will also have it mashed with garlic and sweet chili sauce sometimes.

Sounds great - do you peel it for the wedges? what about for mash?

We do it for the mash too. DC love it on the top of a shepherds pie (normal potato and sweet potato) with grated cheese and onion. Yum

Definately peel for the mash.

My favorite receipe which my friends all love is:

Sweet potato wedges and butternut squash roasted using fry light. Once cooked add (preferably low fat) sausages chopped into 3-4 pieces.

For a dressing use a couple of tablespoons of creme fresh with a teaspoon of dijon mustard to taste (the mustard with the bits in it)

Serve with a nice salad with balsamic vinegar dressing.

I love it and yet I hate mustard with avengence and its low in fat. I think from memory this is a weight watchers receipe!

Wedges are great. DH takes mashed sweet potato, mixed with sauted onions and herbs, and kneads it into bread dough (made in bread maker). Bakes in oven. It's lovely and moist - great with soup, or pate, or just for different sandwiches.

dice/sautee an onion, add tin of chick peas, tin of tomatoes, diced sweet potato, diced zucchini, 1 tsp fresh rosemary. Serve with rice. (I've just been giving ds the 'bits' that he can feed himself.)

Fry onions and mushrooms, then add red lentils, veg stock and any spices you feel like. Simmer until smooshy. Meanwhile steam some sweet potato until tender, then add to lentil mixture. serve with rice, quinoa etc

I second it as mash on a shepherds pie - really good

Makes a great layer in a vegie lasagne - mash it and mix a bit of ricotta in, then layer with pasta, other roasted veg (courgette, carrot, squash, peppers), white sauce, spinich.

yumee - you lot are making me hungry! Almost looking forward to tommorow now to try some - and I hate cooking and am crap at it! kd73 can you elabourate on the ww recipe - I need specific step by step idiot proof instructions.

I don't peel the wedges - they fall apart if you peel them (my DS hasn't quite managed the complex skill of holding without squeezing as hard as he can!)

Sweet potato & orange soup

1 onion, 500g sweet pot, 200g normal pot, 2 tblsp freshly squeezed orange, 700ml veg stock (try Marigold bouillon) 1/2 teasp gound coriander, 150ml milk.

Sautee onion, add rest (not milk !) simmer 1/2 hr, puree add mily - Ta Da !

You could get mr potato head face bits and stick them in to make mr sweet potato head.

Chop into roast potato sized chunks, and bake in the oven in the same tray as some pork chops.

dh's favorite sweet potato dish is

peel and chop small, place on a oven tray and drizzle with 1 tbl olive oil, 1 tbl balsamic vinegar, and 1-2 tbl maple syrup. and a sprinkle of salt.

pop it in the oven till dark and crisp.. yes I know its sweet and I only ever make it on holidays and special ocassions but its a lovely side dish and DH's fav
