Okay... Pancakes (and NO I know how to make them....) what I want is

any recipes for pancake cakes iyswim!

I have the weekend to experiment (oh happy days).

This "cake" would need to be able to be eaten warm or cold.

ladette-- will have a look and rummage though my recipes for you... whilst I make cards, do the laundry and bead a necklace.. .... I'll post it in a little bit as not sure where i placed it... might have it on the puter even somewhere...

ladette-- might be a bit longer still..at my friend frizbe's shop covering for her while she runs her DD1 to the doctors. She fell at preschool and her arm might be broken... so I am incontrol of her comic/games shop. If not tonight I'll post it for you tommrow if i get a chance... it is good... promise

sorry to hear about your friend's DD, hope she's ok. She'll be so glad to have you around to help out. Seriously, no hurry re the recipe. Take as long as you like. Otherwise I'll feel guilty if I take an age to get round to making them.

frizbe's DD is ok.. badly bruised but no broken bones.. have had a serch throught my recipes and here is the one for maple pecan muffins, its a one bowl muffin recipe so not fussy.. but it was ages ago when i made it so I can't remember the results.. may make some tommrow and see how the recipe works... also found I have one for maple nut scones (I haven't tried that yet) and I have one for maple pecan cookies too (which i have tired and are quite nice)

Maple Pecan Muffins

Ingredients

2 cups self-raising flour
1/4 cup firmly packed brown sugar
1/2 cup maple syrup
½ cup milk
2 eggs
2 tablespoons melted butter
1 teaspoon vanilla extract
1 cup chopped pecans

pre heat oven to 400F.
Place paper baking cups into a muffin tin, or grease and flour the muffin cups.

In a medium bowl mix all the ingredients except for the pecans the batter will be slightly lumpy. Carefully fold in the pecans.

Divide the batter evenly among muffin cups filling them about two thirds full.

Bake 20 to 25 minutes or until golden brown.
Immediately remove from the pan and place on a wire rack.
For the best taste serve while still warm.

made them yesterday have blogged them but the picture is a bit crap.. but the muffins were lovely.. all gone now
