I have made this one delia's low-fat carrot cake and loved it. I jut did the cake though, not the topping

I've found my book - love this and its easy, don't know how it keeps as cake doesn't last in our house!

Preheat oven to 180/gas 4
Grease and line 7" square tin, or I htink I've used a loaf tin before
In large mixing bowl mix 6oz light muscovado sugar, 6 floz sunflower oil and 3 large eggs.
Mx then add 5oz grated carrot (about 3 carrots) 4oz raisins or sultanas and grated zet of 1 orange.
You're supposed then to mix the dry ingredients separately before adding to wet, but it doesn't happen that way here!
6oz SR flour, 1tsp bicarb, 1tsp gd cinnamon and 1/2tsp grated nutmeg (that's half)
Stir it all together, tip in tin and bake for about 45 mins (normally needs longer but maybe thats just my oven)
Because it uses oil not marge its quite a wet mix so easy for kids to stir, don't need a machine.
If you want icing beat 6oz icing sugar with 1.5 - 2 tbsp orange juice and drizzle over the cake

I've done it with part grated apple and part carrot and that was nice but needed a bit more cooking as was wetter. Next I want to try all apple and dried cranberries instead of sultanas - will let you know how chief foodtaster (DH) gets on
And I only ever measure spices roughly so lots of flavour, try mixed spice instead, or ginger

Ok here goes:

3 tablespoons low fat plain yoghurt
75 g soft-tub margarine
175 g carrots peeled & grated
1 tsp cinnamon
100 g soft light brown sugar
200 g wholemeal self raising flour
1 tsp baking powder
2 eggs, beaten
50 g walnuts (or use raisins as a substitute
finely grated rind of one orange

ICING
125 g philadelphia cream cheese (can use low fat)
4 tbsp icing sugar

Oven at 180 (preheated)
Grease 20 cm square cake tin, line with baking paper

  1. Stir yoghurt margarine carrrots cinnamon sugar flour baking powder eggs and walnut (or raisins) until smooth in large mixing bowl. Pour into tin and level off the top
  1. Bake 35-40 mins. leave in tin to cool then remove onto wire rack
  1. Mix the icing ingrediants together and then spread over cake

Goood! And also not TOOOO fatty.
