Stale gingerbread

I have two loaves of (bought) stale, organic gingerbread. What can I do with them - any ideas for a pudding?

How about gingerbread pudding with lots of cinnamon in the custard? (And hey there how are you doing btw?)

Use 2 McVities ginger cakes, slice each into 8 pieces and lay in a dish. Make sticky toffee sauce using brown sugar, Lyle's syrup, butter and double cream and pour over cake. Heat slowly in oven until sauce is bubbling and soaked into cake. Not for the connoisseur, but if you want quick, delicious, stick to your ribs pud - then try this.

Apparently found via Google but has no proportions!!

God that sounds sinfully delicious(I must have pmt as I don't normally even like sweet things that much and I now have a sudden urge to go and make one of those devil puddings)

I have made a very quick b and butter pudding to try with one - but have dss here on saturday and will do evil stick to ribs version then - thank you!

The gingerbread and butter pudding was bloody lovely- looked like a souffle and tasted divine. yum.

oops, didn't read all the messages...duh...obviously wasn't the first one to suggest it, lol!
