Help! Best icing for biscuits???

In a sterling attempt to support DS1's school Christmas Fair, he & our au pair made about 100 'honey biscuits' in the shape of trees/ bells/ reindeer etc this afternoon.

They want to ice them tomorrow, but having just browsed Tesc.com I realise I haven't a clue about icing (long time since home economics lessons!)

I know you can get the Supercook tubes to write/ decorate with, but I had imagined coating some of the biscuits with white icing first. In which case, what should I use:

  1. Icing sugar & water paste - will this dry flat?
  2. Tub of icing - but looks as if for big cakes?
  3. Roll on icing - surely for christmas cakes?

If 1), which I suspect - how do I coat the biscuits - a brush, spoon, knife, by dipping????

Can't believe I don't know this - bad, bad, mother....

Sure it would be 1). And with 100 biscuits you have plenty to experiment with. Icing will dry pretty quickly so you'll soon know if it's working. Do find that you use masses of icing sugar to only a tiny bit of water. Swirl icing on with pallet knife or spoon and should dry flat. Good luck (where are you going to put 100 iced biscuits to dry?!)

Good question re the drying - I hadn't thought of that either!

Presumably you only ice the top?

Just got out my Cookie book -
Glace icing : 115g icing sugar, few drops vanilla essence, 1 tbsp hot water - should dry smooth & flat if you use palette knife or back of spoon (dip in warm water to help spread)

Icing Glaze : 1tbsp lightly beaten egg white, 1 tbsp lemon juice, 115g icing sugar. Mix egg white & lemon juice & gradually stir in icing sugar - gives a shinier slightly harder icing.

Yes, just ice the top - unless someone recommends a filling to jam two biscuits together with?

If you want to really impress - I have the recipe for buttercream filling !!

(I must just admit that I am no Nigella Lawson, but I do like cook books !)

plus a tub of sprinkles ..

they'll be great and DS will have loads of fun making them

I don't think I'll be going for the 'filled' version - sounds a bit of a faff!

JamieSam - if I have time I might try the shiny one!

Have just ordered about 4 different colours of icing tube pens, so in reality they'll probably end up being a right mess and we'll have to eat them all, and buy a cake for the fair
