recipe that includes fresh pineapple and chickenbreastfillets...

does anyone have any ideas...have a whole pineapple that needs to be used asap...and thought I might do some sort of sweet/savoury dish with teh chickenbreast...just need a recipe now....

I used to have a student recipe that was pineapple on top of chicken with some tomatoey rice

I half remember melted cheese on top of the pineapple I think I copied it from a TGI Friday recipe

now I think about it I am unconvinced

make salsa with the pineapple then you can jerk season the chicken and have the salsa with that, then the leftovers will keep for another day.

actually realistically I would just eat the pineapple in rings with coffee like a biscuit

and give a couple to the kids to gnaw on

why don't you just make a sweet and sour sauce add pineapple in chunks and stir fry the chicken, cooking it off with the sauce afterwards.....?

All the recipes looked gorgeous, and had given me some inspiration
I ended up stirfrying the chicken with onion, chilli, garlic, red pepper, mushrooms and some of the pineapple. Then I blended down the rest of the pineapple with some natural yoghurt and cherry tomatoes, added that to the pan, as well as lots of spices and herbs, cooked some rice and added that, too, for a while, and served it like that....and you know, it tasted really quite nice
