What can I cook with...

baby spinach, charlotte potatoes, yellow pepper, onions.

All need to be eaten up today really, as I am going away for a week and DH will likely eat KFC.ready meals in my absence!

I do have store cupboard ingredients and tuna and chicken in the frezer, but only one egg (could probably go buy some more)

Any suggestions.

Alas, no chicken breasts. Usually buy thighs but no organic/free range left in shop so bought drumsticks instead.

I dont really fancy an omelette, had considered this...

Have also found single cream and curly kale which needs to be used!...I can buy some more ingredients if there will nothing left over, and wont cost too much, as I got to go get milk for DD anyway...

I made tomato and spinach pasta for lunch with the baby spinach, peppers and onions. DD 18 months, does not like spinach if its whole, so I blitzed it and it was absolutely delicious, like a tomato and spinach pesto, esp as grated parmesan over it!
