Last year I gave someone my beloved copy of How To Eat as a thank-you gift. What a mistake. I hope to get a new one for Christmas, but in the meantime, is there anyone out there who can be bothered to transcribe Nibella's vegetable soup recipe, the simple one from How To Eat? Many thanks from expat.

1 onion, 2 carrots, 1 turnip 1 parsnip, 1 maincrop potato, 1 stalk celery, 1 leek, white only, 3 tablesp olive oil or 45g butter & a drop of oil, 1 ltr veg stock, 1 bouquet garni nutmeg, 1 -2 tablesp dry sherry, fresh parsley chives or chervil to sprinkle.

Peel and roughly chop veg and thinly slice leek. Blitz in processor to medium fine.heat oil in wide lidded pan, turn chopped veg in oil then sprinkle with salt, cover and soften over low heat for about 15 min, stirring/shaking from time to time. Add stock, bouquet garni, ground pepper, simmer 20-40 min, then blend whizz or mouli. Season, add sherry, sprinkle herbs.

Mmm, might try it.

Thank you, eemie! You're a star.

It's very good, if I recall correctly.
