How do you make cauliflower cheese?

do you boil/steam the c.f first, then pour cheese sauce over it, then stick it in the oven?

Steam some of the leaves to for a bit of extra colour and flavour, and if I'm feeling generous I slice up some cherry toms and shove them on the top. Grain mustard also nice in the sauce.
