Need ideas for a starter and pudding

Cooking fish for a main course for friends but need a simple starter and pudding (got kids so not much time to stand over the stove!) so I need something quick but looks stunning and looks as if I have been cooking all day.

Help!!??

Starter - filled field mushroom - filled with chopped mushroom stalk, brown rice, sweetcorn, dill and blue cheese. Bake until cheese melts. Serve on rocket.

Pudding - Apple pie.

mixed salad leaves, parma ham (torn) cherry toms, peaches (torn) mozzerella (torn) good french dressing - i do this as a starter, served on a really large platter in the middle of the table for guests to help themselves. can be prepared in advance, cling-flimed and put in fridge.

pudding - one of those ready made sponge flan cases, tub creme frace )sp) tub mascarpone, caster sugar to taste, a bit of creme de cassis, mix, spoon over flan case, then arrange sliced strawberries all over top, serve with a jug of ready-made fruit coulis - easy-peasy, tastes good, looks pretty, no-one notices the flan-case is not homemade

steamed asparagus, drizzled with extra virgin olive oil and malden sea salt flakes. parmesan shavings on top.
