banana cake - help me use up these mushy items my dd has found in the back of the cupboard

we need a good banana cake recipe

we are sad and have lots of ripe bananas

it will cheer us up and use them too

This is c&p'd from an email I sent a friend (so apologies if it's not very professional )

'Banana Cake

100g/4oz butter
225g/8oz sugar
3 eggs
225g/8oz mashed ripe banana
150g /5oz milk
225g/8oz flour
10ml baking powder

Put in a big bowl

Mix it until it begs for mercy

pour into a greased and lined 20.5/8? cake tin (or as near as damn it, I use a rectanglular dish)

bake at 180c/350f/GM4 for 1 hour

let it cool in the tin for 10 minutes or so before turning out onto a wire rack to cool

exceeding nice with chocolate buttercream on top, or with custard : )

Obviously this isn?t quite how it?s written in the book, so if you want the exact recipe let me know and I?ll copy it word for word.'

It is nice though

Have dug out the banana loaf recipe...

75g butter
100g caster sugar
125g S/R flour
0.5 tsp bicarb of soda
0.5 tsp salt
0.5 tsp ground ginger
0.5 tsp mixed spice
1 egg, beaten
2 ripe bananas, chopped
100g mixed dried fruit

Preheat oven to 170C, 325F, gas mark 3. Grease and line 2lb loaf tin.

Cream butter and sugar til light and fluffy.

Sieve flour and spices. Add bicarb of soda. Beat in egg and bananas til smooth.

Add dried mixed fruit and stir til combined.

Pour into tin and bake for about an hour or til skewer comes out clean.

Cool.
