I'm having a dinner party for 8 tomorrow night and am looking for inspiration for a 3 course meal. I tend to be a bit of a one pot wonder when it comes to cooking, which is fine, but I'd like to make something that looks a bit more special. Sort of a plated meal that you'd get in a restaurant.

HOWEVER: it needs to be quick and easy to prepare. Besides cooking the three courses, I also need to get groceries, clean the house, make up beds, prepare a kids meal and do a bit or office work. So time is of the essence.

Also, it can't be fish/seafood as I'm allergic to it and it can't be lamb as one of the people coming hates lamb.

Noodle recipe:

Ingredients:

3 boiled eggs (chopped)
1/2 green pepper (chopped)
4 tomatoes (chopped)
Packet of mushrooms (chopped)
2 tins of tuna
Salt and pepper

Put everything together and mix with mayo.

Cook the noodles.

Get a big dish. One layer of noodles topped with white sauce. Put the mixture in the middle. Put another layer of noodles. Top with white sauce and grated cheese. Bake in the oven for 30 minutes on 180degrees Celcius.

Serve with chutney.

I created this myself. My husband loves it!

To start, homemade garlic bread:
Crushed garlic, mixed with 2 tbsp butter, melt in the microwave for 10-20 secs, cut a baguette in half, spread on the garlic butter, wrap in foil, and stick in the oven for 15-20 mins. (I often pour some sweet chilli sauce on too, cos I love it!)

Main, chicken and sage roulades: Breast of chicken per person, whack it a bit to flatten it, put a whole sage leaf (or two) inside, roll it up and wrap 2 slices of proscuttio ham around it (or a slice of bacon) and stick a cocktail stick in it. Fry in some oil, covered, for about 20 minutes, turning once or twice.
Serve with a pasta mixed with a simple homemade pesto: loads of fresh basil, two garlic cloves, a few tbsp olive oil, and some cheese, all whizzed up in a blender.

Dessert, ice cream?? Not a big dessert person...

Did you not see This Morning ummmm well this morning!?!?! They had a 3 course dinner cooked on there and it only took a few mins.

I have printed it off for my cook book!

Also I did posh bangers and mash with home made onion gravy a while ago for a dinner party and it went down a storm!

Em, that should have been pancetta, not proscuitio ham... never mind!
