Leftover Roast Chicken - need inspiration!

Usually, it's roast chicken one night, veg meal the next night and then strip the chicken and make tea with it the other night.

It's:
chicken meatballs - blitz leftovers in food processor and mix into balls with breadcrumbs, parm, egg and leftover roast veg blitz in processor. serve with homemade chips.

coronation chicken salad

chicken curry

chicken soup with veg and noodles

chicken with tomato sauce and pasta

white bean chicken chilli

I need some new ideas!

What do you do with your leftover chicken (carcass is for stalk for another soup)

oriental chicken salad
(noodles/chicken/orange/grated carrot/celery/nuts or sesame seeds + soy/honey/orange juice sauce)

moroccan omelet
fry 1 chopped onion with 1tsp gingerpowder/chopped coriander&parsley/1crushed garlic/1lemon juice & saffron if you have any.
Add chicken
Add beaten eggs cook 2mn and put under the grill a few more minutes untill set. Eat with salad and crusty bread.

creamy pasta
fry 2 tomatoes+mushrooms+garlic+spinach
Add chicken+single cream+half knorr cube
mix in pasta and cheese

you can also do

mexican empanadas
fry onion/garlic/red peper with salt/peper/paprika/cumin powder, add shreded chicken and stuff pastry squares & bake

fajitas or burritos
chicken/tomato/onion/guacamole/grated cheese rolled in soft tacos
Eat cold as wraps or pop in oven and bake

oo, i didn't think of empanadas!

i've got a pastry press and shortcrust and puff pastry.

perfect!

got celery, onion, carrots, canned mushrooms to use up and frozen peas.

milk.

and a bored 4.5 year old on the mend from chickenpox but still too many blisters to go out much.

Chicken bake or pie, depending on what you have. It sounds revolting, I know, but is really lovely!
Chop and fry onion, garlic and a courgette.
Mix with leftover chicken, a tin of condensed mushroom or chicken soup and the same amount of mayonaise. Put into baking dish and top with either mashed potato, puff pastry or - if you're feeling lardy - a mix of crushed crisps and grated cheese . I would urge you not to be revolted at the bizarre things in this recipe and give it a go. We had it at someone's house for dinner and I was somewhat taken aback when this turned out to be the recipe!

I make pies in muffin tins with shortcrust pastry

GREAT ideas, capp!

i did this before with a bonbon tin, as a canape, with sloppy joe mix. no top, you just make wee cups.
