i've made green thai curry before with chicken - I browned/sealed the chicken pieces first, then added green curry paste, then coconut milk. It was great, easy, no problem.

tonight i'm doing a prawn version and i want to incorporate this aubergine which is staring at me.

so, i know it sounds dumb, but the question is: what order do i do it? and can i just put the diced aubergine straight into the curry or does it need to be cooked a bit first?

i am thinking i warm the curry paste in the pan, then add coconut milk, then prawns & aubergine?? or do the prawns go in earlier? when do i add the coconut milk?

sorry if this is a bit basic i have been worrying about it and just need someone to hold my hand! thank you!

Oh I just found this thread here from Monday which seems to answer my question:

1 paste
2 coconut milk
3 prawns
4 aubergine

I fancy making thai green curry. How do you make it? I know you brown the chicken off - then what??

i found a recipe here if you are making it from scratch... i have done it the lazy way where you just brown the chicken then stir in some green curry paste (you can buy from supermarkets or I get a nice one from oriental food shop), then pour in a tin of coconut milk. and you can add whatever veg you want. yummy!
