Went to sainsburys and all sold out of cheapo madeira, only £13 fancy oak aged bottle left. Am NOT spending £13 on mushrooms & rice dish.

sherry or white wine would do my guess is marsala would be too sweet. Noilly Prat is also v. good in risottos if you have any
