given that it's going to be cooked in a hot oven? Would it be that bad to use it or should I bin it?

I would. if the butter has gone rancid it will stink (obviously I wouldn't use it after all if that was the case).

is it use by or best before?

god yes. i've used it when it's been a few weeks over, and it smelled and tasted fine. like the good senora says, your nose will tell you if it's gone wrong.

what could happen to it? only go mouldy or rancid. since it isn't blue and furry (i presume) taste a bit or find a volunteer to try.

I did just before christmas and it was fine. Just give it a sniff and if it smells fine then go for it I say!
