What is on your menu plan this week?

I did one for last week:

  • salmon fillets with watercress, sugar snap peas and avocado
  • steak with lemon and thyme (tuna for me), oven wedges and onion rings - we didn't have this so will have it this week instead!
  • solw gougons with dill mayo, salad and crusty bread
  • duck and/or roasted veg wraps with egg noodles
  • veggie chilli and rice

And I have just done nextweek's, doing Sainsburys order at same time:

  • pasta and sweet pepper salad
  • grilled cod (chicken for DH) with srping herbs dressing, with salad
  • haddock stuffed with muchrooms, with jacket potatoes
  • thai noodles with crab
  • roasted vegetable mousaka

But this week I forgot, so having to make it up as I go along. What is on your planner, for inspiration!

Tue - Lamb Tagine
Wed - Chilli (slow cooker)
Thurs - More chilli!
Fri - Thai Green curry with big prawns!

probably not to your taste but anyhow:

yesterday had roast so tonight chicken curry made with leftover roast chicken
Tuesday - spaghetti bolognaise
Wednesday - pasta,pesto, broccoli, cheese
Thursday - ready meal night as working late (kids will have eaten at nursery)
Friday - steak pie with mash and carrots

Tues - lamb chop dinner but minus lamb for me as veggie

Wed- fish i think

Thur - something quick like pasta as ds1 has footy so something quick for after

Fri-DP wants KFC!

Tonight we had chickpea, parsnip and spinach curry with wholegrain rice.
Tuesday: vegemince and borlotti bean bolegnaise and spaghetti with broccoli.
Weds baked potatoes with different salads and soya cheese.
Thursday hearty veggie and lentil soup with bread
Friday I let the kids think of something they fancy in the morning then do my best to cook it! Something like a tofu quiche, veg sausage and mash, or red lentil dahl with roti.

Saturday We tend to have a bean stew with quinoa and steamed greens
Sunday a roast dinner with a nut roast/seitan dish for the protein bit and roast potatoes, parsnips, swede, greens and a good chickpea and onion gravy.

For puddings during the week they tend to have some type of soy yoghurt or maybe a biscuit if I've made any.

Weekends we might have soy ice cream and choc sauce or a cooked pudding like treacle sponge.

Tomorrow - Tofu Stirfry
Weds - DH is cooking pasta with lardons and pinenuts and toms etc
Thurs - We are out
Fri - Buffalo Chilli

Plus have made a massive bean, lentil and chickeny soup for lunch most days and for my mum and dd to eat on Thurs night

this week (I plan Friday-Thur):

  • hutspot (mash made withcarrots and beans) with venison sausages dh brought home - they were nice but a bit rich
  • lentil roast with fresh tomato sauce with roast potatoes and roast parsnips/carrots
  • leftover tom sauce for pasta with tuna
  • baked potatoes with prawn marie rose and green beans
  • easy night - broth from freezer with buttered toast for just me and DH
  • vegetable rice with fish fingers
  • lamb burgers and champ

Tuesday - Falafel, pitta, tzatziki, and souvlaki
Wednesday - Chicken & mushroom pie
Thursday - lemon risotto
Friday - salmon with spicy coconut crust
Saturday - shoulder of lamb boulangere (get me)
Sunday - Home made burgers & chunky chips.

Although by the looks of tonight's overcatered dinner, we may be eating kedgeree till March.

Sat: sausages, mash, veg
Sun: veggie roast dinner

Carmenelectra - The chicpea and onion gravy goes like this and is very yum:

Finely chop up and onion and some garlic and sautee very slowly with olive oil. Once very soft turn up the heat and get slightly brown then add a tbs of cornflour/arrowroot and stir well till coated.

Add a splash of stock and stiR in so you have a thick paste (to avoid lumps) then keep on add little bits and stirring till it's safe to add the lot (about a pint - to a pint and a half).
Add about 250g cooked chickpeas (or one tin) and bring to the boil whilst you add some balsamic vinegar - about 2 tbs, and some thyme and rosemary. Dried works really well. Add some soy sauce if you think it needs the salt/colour. Then when it's reduced to what you like it like and remember it thicken as it cools, serve wither as it is or liquidized on your roast >slurp

Today - veggie curry and rice

Tuesday - just me and the girls, so omellette (why can I never spell that?), salad and crusty bread

Weds - veggie toad in the hole, with veg and gravy

Thursday - Goulash and baked potatoes with soured cream

Friday - probably out for curry but if the weather is bad it will something pasta-ish

Saturday - not sure but I really fancy veggie lasagne

Sunday - if dp has been good, I "may" cook him a free-range chicken but otherwise it will be veggie sausages with stuffing, roast potatoes and vege
