I'm doing risotto tomorrow. (lol at all the 'cooking chicken threads' today!). Or you could do chicken curry.

I always roast two chickens - eat one, and then make chicken pie with the second. The children expect it.

Chicken Pie:

Make a sauce with a knob of butter, a chicken stock cube, some flour, and milk.

Add the cooked chicken, peas and sweetcorn.

Put in an ovenproof dish, and then cover with puff pastry (I use the premade that you simply roll out). Alternatively, cover with mashed potatoes.

Put in the over for 30 minutes for the pastry to cook (less if you are using mashed potatoes).

Scence teacher - that is really easy - shame I have not sweetcorn - but will remember that.

maybe the pasta idea is a good one.
