I have a duck that needs roasting and I am just wondering if anyone has any tips on how to roast it to make the most of it's flavours and what best to accompany it with.

Thanks!

only thing i know is to roast it on top of a wire rack as it is very fatty and all the fat will drip off into roasting tin

Prick the skin all over, esp, around the legs and make sure it is dry before you put it in the oven if you want it to be crispy.

Definitely on a rack! And save the fat, it makes wonderful roast potatoes.

Oh, good tips, thanks!

Any advice regarding flavourings (herbs/spices etc.) that would go well with it?
