1 tbsp sunflower oil
1 medium onion (diced)
8 mushrooms (sliced)
1/2 tsp chilli powder
salt & pepper
1 tin of corned beef (cubed)
1/2 can chopped plum tomatoes
Put the sunflower in a deep frying pan and allow to warm up on a high heat
Reduce the heat to medium and saute the onions gently until lightly golden coloured
Add the mushrooms and saute gently until soft
Sprinkle all of the chilli powder and stir
Next add the corned beef and stir until it goes mushy and season with salt & pepper
Add 1/2 can of chopped plum tomatoes
Cook further on a low heat for 5 minutes while stirring, not allowing the ingredients to stick
Serve with a portion of fluffy, buttered rice
