Have got chicken fillets out of the freezer but am feeling totally useless with regard to ideas.

fry chicken with some spices, throw in sliced mushrooms and peppers, serve in wraps and salad

put in dish, cover with tin of chopped tomatoes, herbs, spices, cover with foil, serve with mash and veg or jacket spud

Bash them out - put mozzarella inside and a few basil leaves and the roll up and wrap in parma ham and then bake in oven.

Serve with pasta and tommy sauce or new potatoes and veg and a little sauce.

marinade in curry paste and whack under a hot grill, serve in pittas with salad and yog with touch of mint sauce mixed in and finely chopped cucumber (raita).

Have no wraps so that ones out.
Have tinned toms though - also liking the idea of stuffing them with something yummy, but what though ?

God I'm so shite at thinking of different things to cook

cook the breasts, dice and add to cooked pasta, cooked brocolli and cheese sauce

put into oven for 20 mns

voila

chicken and brocolli pasta bake

add cayenne pepper if you like it spicy

Oh that one's good too naily - and sounds very simple for me.
DD's are 3 and 1 so can't go too spicy

Put in oven proof dish, cover with foil for first 20 minutes, foil off last five minutes to get the cheese bubbling on top. I would serve with green salad or a pile of brocolli and baby corn or sweetcorn or whatever veg you have and maybe mash or new potatoes.

make slit in side.

mix together grated cheese, clove garlic, bit of butter and stuff into pocket in the chicken.

wrap in bacon and cook in the oven.

meanwhile melt some butter in a pan, slice an onion and soften in the butter, chuck in a bit of brown sugar (about 2 tsp) to caromalize the onion, then pour in a bit of white whine (don't worry alcohol evaporates) and some chicken stock.

reduce by half, then pour over the chicken when you get out of the oven and serve. alternatively...

fry onion and garlic in a pan, add chicken which you have cut into peaces and some sliced mushrooms. add spash of white wine and some cream and cook for approx 10 mins. meanwhile cook some pasta. when the chicken is cooked, chuck in some broccoli, mis in the cooked pasta, spoon into an oven proof dish and grate cheese over the top. put under the grill for approx 5 mins or until the cheese is golden.
