Yummy if you peel and slice them. Par boil for a couple of minutes until tender and then layer in an oven proof dish with grated emmental or gruyere cheese, double cream and lots of black pepper. Bake until cheese is bubbly and brown.

I've never tried them but always wanted to.

Mouseman, do they taste anything like regular artichokes (I know they're not related), or are they more like root vegetables (turnips, etc.)?

you can make a really yummy soup out of them. saute an onion & a potato, then chop up the artichokes, saute them briefly, add some stock. Cook until tender then blend, & you can add some cream if you want. my grandma used to make it for us. ps it makes you fart....

miggy I'm sure you've used yours by now but for anyone reading this in future, artichoke and carrot soup is absolutely gorgeous too. Delia has a recipe in her Complete Cookery but it's really just onions added. My "Book of Seasonal Food" recommends that they be eaten at lunch rather than dinner so that their after-effects can be released during "a nice post-prandial stroll in the open air" Grin
