DS is 1 soon () and I'd like to make a birthday cake that he will be able to eat, he is allergic to cows' milk and would rather avoid eggs too. Any suggestions?

One of my friend's dc is allergic to eggs so I made a birthday cake from TooTicky's (vegan) recipe, although I used cow's milk where she would use soya.

3oz margarine
3oz sugar
6oz wholemeal SR flour
soya milk as needed

I also added cocoa and orange zest.

Make it like a normal sponge cake - cream margarine (again soya if you're avoiding dairy) and sugar. Add flour and a little milk until it's the right consistency for cake batter. Cook at about gas 6 (I think) for about 20 mins (I think). It turned out quite soft so I should perhaps have cooked it for longer. But twas delicious. I put chocolate orange butter icing in the middle too.

Thanks PSW

Moljam, would love your friend's recipe too!

I haven't baked anything for years so think a little practice is needed before the day...

MB, not exactly a birthday cake recipe, but one you may find useful in future!

Rub 50g of butter/marg into 200g of SR flour
Add 50g sugar and three ripe mashed bananas

bung in a greased loaf tin and bake at GAS 4 for 45 mins

yummy
