Pulses - beans, lentils, chickpeas - good recipes/ideas?

I grew up eating beans and lentils in my Mum's wonderful thick beef, vegetable and barley soup or lentil soup made with ham. We also often had baked beans. In adult life I've always enjoyed eating all sorts of pulses, there's always hummus in the fridge, and we are never without some tins and packets of lentils, beans and chickpeas in the cupboard.

I was listening to The Food Programme on Radio 4 yesterday and they were explaining how good pulses are for gut health. Also pointing out that a lot of the new, heavily promoted plant-based foods are actually very highly processed, so not a great idea to use as replacements for meat, fish or dairy. Pulses, however, are great cooked in fairly simple straightforward ways. Then there's the huge environmental benefit of growing pulses, which I remember learning about in History lessons about the Agricultural Revolution - because they are nitrogen-fixing plants, growing pulses in rotation with other crops improves soil fertility and reduces the need for fertilisers.

So, all in all, seems like a great idea to eat more of them. Any ideas? I already make vegetarian lasagne/chilli/bolognese, bean salads and soup, but it's always good to look at different recipes for new twists on old favourites. There is almost nothing I won't eat, and we have no allergies/intolerances to contend with, so I'll consider anything if it's not too time-consuming or eye-wateringly expensive. (We're not vegetarians, just trying to keep down consumption of meat, so pulse dishes with meat or fish are of interest too.)

Dhal and chick pea curry, definitely!

Chick pea stew with roasted sweet potato in it, flavoured with cumin and coriander, with fresh spinach added at the end ( think this may have been a BBC recipe).

I'm not vegan but want to try this:

Often do a quick salad with roasted veg and lentils from a tin or a pouch. Goats cheese or feta are a nice addition and any fresh herbs - particularly mint and a squeeze of lemon.

I add chickpeas to rice, most curries and also if I'm roasting veg will chuck a tin in to crisp up for the last 5 to 10 minutes.

Nigel Slater has a lovely mushroom and brown lentil soup with spinach and lemon juice.

Also it's hard to beat soups with lentils and/or beans.

A lot of bean stew recipes give the main flavour with tomatoes and it can get a bit boring. This uses smoked paprika and I really like it:

I made pearl barley with green lentils, butter beans beans, roasted veg, and a lemon Tahini dressing the other day and it was very nice. There's a cafe I go to which serves a cavelo Nero, puy lentil, and falafal salad which is another one of my favourites. In summer we often have mixed bean salad with about 6 different types of beans, Olives, pickles, tomatoes, cucumber, and a dressing with lots of lemon and mustard in it. I love beans, lentils, grains etc, plus we're vegan so try to eat them as often as possible.

@JustJam4Tea I've never used tinned beans but am sure it would be nice. I like the black eyed beans because they have thinner skins than most beans, but I think any tinned beans would be good. I must make it again, soon.

There's a good recipe for butter beans, kale and blood oranges in Anna Jones, also a tasty Mexican black bean and tomato soup. This is lovely. The first time I made it, I didn't have any spinach so I used the leaves of the cauliflower shredded and I wouldn't bother with the spinach now - the texture is much nicer with the cauliflower leaf :)

Also, I soak and cook a pack of various pulses in rotation - chickpeas, various beans and lentils - and add them to salads, stews, curries.

whatever I’m making, I almost always have some cooked pulses in the fridge to add to the dish.

I heard the same programme and have dramatically upped our legume intake!

I have made a vegetarian and more traditional split pea soup this week.

Plus we have had more hummus than usual.

Totally agree with OP about processed ingredients - especially when veg have so much to offer.

My childrens favourites are Jack Monroe's peach (& chickpea) curry, and this www.bbcgoodfood.com/recipes/cheats-black-dhal black dahl.

Websites I use most are www.contentednesscooking.com (the owner, Florian has loads of veg/vegan options) and www.minimalistbaker.com - the latter is mostly for allergy free cooking, but her marinated portobello mushrooms are an incredible substitute for steak. If you can't find it, look for her moussaka recipe as the link is usually nearby.

Books I use most are Bosh, Thug Kitchen, and Broke Vegan. All tend to focus on using whole ingredients. Youngest just told me not to miss out ' One pot vegan' - we're not totally veggie/vegan, just can't afford meat very often. Eldest calls economic vegans as a result Wink.
