Pulses - beans, lentils, chickpeas - good recipes/ideas?

I grew up eating beans and lentils in my Mum's wonderful thick beef, vegetable and barley soup or lentil soup made with ham. We also often had baked beans. In adult life I've always enjoyed eating all sorts of pulses, there's always hummus in the fridge, and we are never without some tins and packets of lentils, beans and chickpeas in the cupboard.

I was listening to The Food Programme on Radio 4 yesterday and they were explaining how good pulses are for gut health. Also pointing out that a lot of the new, heavily promoted plant-based foods are actually very highly processed, so not a great idea to use as replacements for meat, fish or dairy. Pulses, however, are great cooked in fairly simple straightforward ways. Then there's the huge environmental benefit of growing pulses, which I remember learning about in History lessons about the Agricultural Revolution - because they are nitrogen-fixing plants, growing pulses in rotation with other crops improves soil fertility and reduces the need for fertilisers.

So, all in all, seems like a great idea to eat more of them. Any ideas? I already make vegetarian lasagne/chilli/bolognese, bean salads and soup, but it's always good to look at different recipes for new twists on old favourites. There is almost nothing I won't eat, and we have no allergies/intolerances to contend with, so I'll consider anything if it's not too time-consuming or eye-wateringly expensive. (We're not vegetarians, just trying to keep down consumption of meat, so pulse dishes with meat or fish are of interest too.)

I make a lentil' shepherds pie' in the winter - tinned lentils with finely chopped courgette/ mushrooms/ green pepper (or whatever you have in) flavoured with cumin then goats cheese in the mash topping.

Pp mentioned the roasting tin books - lots of good ideas in there for chickpea dishes. Generally I just stick some chickpeas/ black beans in stir fry's, curries, fajitas etc

I used to soak beans overnight then cook for hours. An easy way to use beans is canned. I keep a stock of all kinds in the cupboard, borlotti, aduki, black beans, chick peas etc.
If you don't use a full can they freeze well.
I add beans to soups and casseroles.
My favourite main course is sweet and sour chick peas.
I make tacos with chilli and refried beans (add beans to some saute onion and spices, a little honey and mash up).

We are not vegetarian.

Any tips for making sweet and sour chickpeas, @MossyBottom? I'm assuming onion, green pepper, pineapple and pineapple juice, tomato puree and some ginger, garlic and chilli - would that be on the right lines?

I made a bean salad not long ago with a lovely mix of beans, as I had accumulated a lot of tins. Chickpeas, red kidney beans, cannellini beans, flageolet beans, pinto beans, black beans, black-eyed beans. I took a spoonful or two from each tinful for my salad, mixed the rest up and froze them in portions.

For bean salad, I mix beans with vinaigrette or oil and lemon, Dijon mustard, lots of salt and pepper, drained sweetcorn (tinned or frozen) and chopped spring onions, various colours of pepper, parsley. Best at room temperature.

I buy the ready made microwaveable bag of French-style lentils, and another bag which includes other pulses too, from Lidl. Really cheap and easy and tasty! I just had a bag today - with roasted veg and hake fillet

I eat my version of tarka dhal for breakfast, Ive just made another batch 9 portions out of a 500g bag of red lentils

I couldnt give you a recipe because Ive never successful made it the same twice

I cook the lentils in a bit pot on their own, once the scum is skimmed off I put salt, sugar and tumeric in it, dont be shy

Then a different pan with lots of chopped onions, spices, garlic, ginger, chilli (not too much), fresh toms (tonight was out of a tin, not as good). Then sometimes I put in coconut milk, sometimes not, sometimes spinach or mushrooms, sometimes not. Lots of chopped coriander.

For 9 portions I think I worked it out to be 180cals per portion

That's quite similar to the recipe linked above, @bellac11. Good to get another vote of confidence for it. I've used a not dissimilar recipe for courgette dhal which I probably got from MN years ago, from someone called Ellie Pear. She recommended eating it with hard-boiled egg, which does work well.

I think people think Im odd eating curry for breakfast, but its high in protein, low in cals, very filling and warming, like a more tasty porridge. I make it very mild, its a comfort food

Aubergine and chickpea stew - I make with tonnes of garlic and add pomegranate molasses.

Lovely recipe initially from Hello Fresh. Roast Mediterranean vegetables, lentils cooked with lots of harissa. Mix together and serve with feta and lemon

Jalapeño burgers - can't remember where I got the recipe from as I now make it from scratch.

Whizz up two drained cans of beans (any kind but probably not chickpeas) with a really good couple of handfuls of drained jalapeños (or less if you don't want them too spicy), squirt of lime (usually from a bottle), seasoning (plenty salt needed) and 200 grams or so sweetcorn (defrosted from frozen or from a tin, doesn't matter) and a good couple of handfuls of coriander.

Tip into a bowl and add a couple of beaten eggs and enough breadcrumbs to make a stiff mix. Chill in the fridge for an hour or so (not essential but makes it easier to handle), shape into burgers and shallow fry. This makes loads, I usually freeze a pile of uncooked burgers.

Crispy roasted chickpeas are the bomb.

The packets of precooked puy lentils are great for salads.

And the One Pan, One Planet book has an amazing shepherds pie recipe - a tomatoey bean base topped with potatoes and cauliflower, I'll see if I can find it.

Shameless placemarking.

I do a straightforward red split lentil dahl with onion sweated with fresh ginger anf carrot and a mix of whatever spices I find recommended on BBC food. As ds won't eat many pulses I box it up for my lunches.

I just did a curry of onion softened in oil and spices bloomed in oil with them, roasting sweet potato chunks with the same spices, with a can of chickpeas with their liquor added, then a can of plum tomatoes broken up in the pan, then the sweet potato added in, then half a ton of coconut milk. About 10 minutes between tins. Would have been better with fresh coriander going in with the coconut.

I threw out all my Rose Elliot books because I have never made anything of hers that wasn't super dull! I think there are cooks you get on with and cooks you don't though.

Indian recipes are great for pulses and lentils. I just made a dhal with tomato and spinach.
I make hummus quite often. I found a recipe on YouTube which works well for me. Basically a couple of cans of chickpeas (or boil your own), with lots of garlic, lemon, tahini and seasoning.
One of my favourite recipes is called rajma masala. This is a spicy red kidney bean dish. I’ve adapted a recipe to my own taste but look for an authentic one and just tweak the spices for chilli levels.

we do a v simple dish with puy (or green/grey) lentils, with sliced red onions, olive oil, carrots or peppers if wished, parsley. feta if wished, or a poached egg. Is amazing

household fave - thunder and lightning. soften finely sliced onions (red or white), 2 tins chickpeas, pasta, grated cheese (let it melt in). complete protein, totally delicious.

I'm sure lots have said red lentil dahl, absolutely delicious. Lentil bolognaise is gorgeous, as is green lentil, rosemary and garlic soup. I clearly have a thing for lentils 😆

Today on Radio 4 at 16:00 I listened to the Food Programme Todays episode was Beans Part 1 : Are legumes the answer?

I've checked that it is still available on BBC Sounds. Lots of interesting talk about how to cook beans with a really fresh exciting taste. I shall listen again, thought others here might find something of interest.
