Pulses - beans, lentils, chickpeas - good recipes/ideas?

I grew up eating beans and lentils in my Mum's wonderful thick beef, vegetable and barley soup or lentil soup made with ham. We also often had baked beans. In adult life I've always enjoyed eating all sorts of pulses, there's always hummus in the fridge, and we are never without some tins and packets of lentils, beans and chickpeas in the cupboard.

I was listening to The Food Programme on Radio 4 yesterday and they were explaining how good pulses are for gut health. Also pointing out that a lot of the new, heavily promoted plant-based foods are actually very highly processed, so not a great idea to use as replacements for meat, fish or dairy. Pulses, however, are great cooked in fairly simple straightforward ways. Then there's the huge environmental benefit of growing pulses, which I remember learning about in History lessons about the Agricultural Revolution - because they are nitrogen-fixing plants, growing pulses in rotation with other crops improves soil fertility and reduces the need for fertilisers.

So, all in all, seems like a great idea to eat more of them. Any ideas? I already make vegetarian lasagne/chilli/bolognese, bean salads and soup, but it's always good to look at different recipes for new twists on old favourites. There is almost nothing I won't eat, and we have no allergies/intolerances to contend with, so I'll consider anything if it's not too time-consuming or eye-wateringly expensive. (We're not vegetarians, just trying to keep down consumption of meat, so pulse dishes with meat or fish are of interest too.)

We have a Leon cookbook and there’s a recipe in there for a warm curried chickpea, paneer and beetroot salad which is absolutely amazing.

Today on Radio 4 at 16:00 I listened to the Food Programme Todays episode was Beans Part 1 : Are legumes the answer?

I've checked that it is still available on BBC Sounds. Lots of interesting talk about how to cook beans with a really fresh exciting taste. I shall listen again, thought others here might find something of interest.

Yes, that was what gave me the idea to start this thread! Part 2 next week.

We really like this baked falafel recipe (although I make the falafel balls smaller than she says).

Any tips for making sweet and sour chickpeas, @MossyBottom? I'm assuming onion, green pepper, pineapple and pineapple juice, tomato puree and some ginger, garlic and chilli - would that be on the right lines?
Pretty much spot onGrin . Nothing's ever the same twice as I don't tend to follow recipes.

Burnt aubergine chilli

Slow cooker Chana masala. It's best with only 2/3 of the chickpeas, since it's extra saucy.

Lentils with buttery aubergines.

I make a sweet & sour butterbeans with salt, vinegar, mustard, pepper, lemon juice, worcester sauce, brown sugar ..all to taste. Also tin of chopped tomatoes, veg stock cube 2 tins butter beans inc juice, an onion & some garlic.

Fry an onion & garlic, add all other ingredients. Cook in slow cooker’ lid off for last hour.

Sprinkle with feta. Serve with flatbread

Or, serve with rice n peas.

I used to do a brown rice and lentil recipe when DC were young. It’s from an Annabelle Karmel book. Has lots of veg and comes out almost like a risotto.

I do a smoky paprika and garlic butternut and chickpea risotto which is lovely. Non veggies can add crispy fried chunks of chorizo too.

Today I made a red lentil and spinach dahl with garlic chilli and lemon.

Greek gigantes - butter beans with olive oil, tomatoes, onion, garlic and dill - are gorgeous with crusty bread and salad.

OP, check out YouTubers - The Happy Pear, Rainbow Plant Life, & Pick Up Limes. They're all vegan, but they all use lots of fresh vegetables & beans, you don't have to go vegan or vegetarian. For good gut health there was a report a while ago that recommended as wide a range as possible of different types of plant based foods that are unprocessed/relatively unprocessed.

Two of my favourite bean recipes for the winter were always cawl (lamb stew) which I always add butterbeans to (soaked overnight), & pork or sausage & mixed bean & vegetable stew. Both go very nicely with dumplings if you like them.

There's a cranks bean meal (really only uses kidney beans) which my DM makes. Basically it's almost a ratatouille but not quite and with kidney beans. You serve avocado slices, soured cream and grated cheese with it and a small jacket potato.

She also does a lentil pie (Cranks), which she's tweaked to include sweet potato. This is served with rice, mango chutney and yogurt and banana slices.

Also a FYI, I heard that Spanish people live for a long time, partly due apparently to beans/pulses etc in their diets.

Yes, I think it was mentioned in the Radio 4 Food Programme that Spain has done very well in some recent rating exercise. Can't remember which one.

I really must look over my recipe book shelf and see if I still have my ancient Cranks recipe book. Haven't looked at that for decades. We used to enjoy an occasional meal out at the Cranks restaurant near Charing Cross station.

Yesterday, I tried chickpeas revithia at The Real Greek. It was bland but still decent for a side. Texture-wise, I could tell that was definitely made from freshly boiled chickpeas though, not the can.

I use pulses a lot. Yesterday was butter bean stew (involves butter beans, tinned tomatoes and whatever veg I have), tonight is a vegetable and chickpea traybake (think I have kohlrabi, beetroot, carrot and spring greens) and tomorrow or Thursday lentil ‘bolognese’.

We eat quite a lot of Mexican food made with beans instead of or as well as chicken. Tesco do a lovely tin of taco mixed beans in spicy tomato sauce that I cook along with peppers, onions, spring onions, sweetcorn and eat with tortillas or tacos.

Black bean soup with corn tortillas and then any left over becomes refried beans. Great for breakfast with a fried egg on top!

If I'm cooking something oven based with rice in the pot I add a can of chickpeas and everyone eats it without really noticing.

Great thread I've picked up a few good ideas here!

Sadly, I appear to have got rid of my Rose Elliott Bean Book and my Cranks recipe book. I do have some other recipe books which might yield good pulse recipes, though, so will endeavour to remember to post any I try over the next few weeks. The man who ran The Place Below, which was a lovely vegetarian recipe in the crypt of St Mary le Bow church on Cheapside, wrote a very good cookbook which has some excellent recipes. I recall one being for Puy lentils with cream and balsamic vinegar.
