Calves is nicer than lambs but whatever kind you get 1) make sure it hasn't been frozen first (makes it mushy) and 2) soak it in milk for a short time before you cook it.
(I like fried liver and bacon with fried onions, no gravy - coat the liver with well-seasoned flour first. At least I used to but only DH and I like it and life is too short for making umpteen different meals even when one of them is ovened pizza.)
