yesterday I had lovely meal which was baked sweet potato, houmous, and watercress and tomato salad

was yummy but mainly easy

want more like that

Make a butter with dill, lime zest and juice and chilli and put a spoon of it into a baked sweet potato. It is delicious.

Bake a large potato. When cooked scoop out the potato from the skin and put into a bowl. Add grated cheese and mix. Put mix back into potato and grill until cheese starts to melt and brown. Top with a slice of tomato and grill a little longer.

You could add allsorts to this. Chicken and broccoli, Sausage and tomato, Spinach. Ideas are endless.

My MOL served baked potatoes with a whole foie gras as the main course on Christmas Eve .

Maybe not what you .are looking for .

Personally I think baked potatoes are lovely with ricotta cheese mixed into the potato, and a sprinkling of fresh parmesan on top.

Or some fried pancetta and onion.

Chilli con carne (can make it up as a huge batch in a slow cooker and freeze individual portions, so just a case of defrost/reheat).

cook a couple of the frozen spinach balls, mix with mascarpone and nutmeg,
or

Cook some bacon, slice some brie, slice some tomatoes, put on top of open baked potatoes, put back in over till Brie melts a bit.

as rubberduck we use them as vehicles for leftovers - chilli, bolognese, portions of casserole too small to make a whole meal etc

Baked sweet potatoes served with soured cream and mango salsa - drool.

Bake ordinary potatoes, scoop out the flesh and mix with a tub of garlic and herb soft cheese then grill. Or similar but with normal grated cheese and some lightly cooked leeks.

Homemade coleslaw.

Bake a large potato until the skin is really thick and crisp. Cut in half, scoop out all the flesh and place in a bowl.
Mash the flesh with a little butter, a generous dollop of soured cream & chopped fresh chives (or you could use whatever other fresh herbs you fancy and perhaps soft cheese?)Put the mash mixture back into the skins, fork the top and place under a hot grill until they start to brown on top. Great with a steak (or grilled chicken/fish) & a salad, or as a BBQ accompaniment.

Sweet potato is best without too much interference, I find.

I peel & cut it into chunks and chuck in a roasting tin with butternut squash, red & yellow peppers, courgettes, red onion (or whatever veg I've got), drizzle with olive oil, throw in some sprigs of rosemary, season well and roast until tender. About 10-15 mins before end of cooking, add some cherry tomatoes and slices of halloumi cheese on top and whack up the heat / place under thr grill. Yum.

Scoop out insides and mix with grated carrot and cheese and a bit of chopped onion - then refill and grill. Delicious hot or cold - I do mini ones cold for parties and they're always a hit! To be fair, I have my mum to thank for this as she used to do them when we were kids.

decent quality smoked bacon, fry up with some mushrooms place on potato and plonk cheese on top, grill - really warm and comforting on a winters day.

Some wonderful sounding ideas on here already though - sweet potato, houmous, watercress and tomato sounds yum yum yum

Cut the cooked baked potato into wedges. Lightly coat with oil and crisp up in the oven. Cover with a jar of salsa, mild or medium and them cover with grated cheddar cheese till it melts. Kids love them and they are so tasty.

bake potatoes.
cut in half and scoop out flesh into a bowl
mash with butter and a dash of milk s&p
add leek and bacon to the potato and refill the skins. dip them in a plate of gruyere cheese and put back in the oven to go crispy

other things that work instead of leek and bacon:
semidried tomato and basil or rocket with feta
olives and chopped herbs with a bit of harissa
chorizo & peas (put pinch of saffron in the milk befor mashing into the potato)
fried green cabbage with a pinch of garlic
wholegrain mustard and spring onion
smoked salmon slivers, chives and broad beans topped with feta
