i had some beef in freezer - only been there a week - i bought it on best before day and froze it same day - took it out on wednesday to defrost - been in fridge since i took it out - 2 hours ago i put it in a pot with some stock and veg to make a casserole - i just went to taste the stock - it tastes funny

i plan to simmer it another 2 hrs do you think itll be ok?

Should be cooked within 24 hours of taking out of freezer
See how it tastes an 2 hours but don't risk hours of puking over it!

yuk no way would i eat it..i'm really fussy about food and wouldn't risk eating anything I wasn't confident about

Did it smell before you started to cook it? If it was off, surely it would have smelled odd then?

I did this with mince last week - took it out of freezer, cooked it 36-48 hours later and it smelt funny. I've re-frozen it again though for DH, he's got a cast iron stomach, he can try it

I'd have thought two days in the fridge would be ok.

Wait and see what it's like when it's fully cooked.

i didnt really have my nose close enough to smell it when i took it out of bag to go into pot

i have raw meat and stand well back usually

Even if you decided to go for it you'd probably not eat it and certainly wouldn't enjoy it. And waiting for your dds to start puking wouldn't be much fun either.
