I'd like a recipe for using stilton in soup please

I remember having a stilton and ???? soup a while ago, which was quite nice and rich - great for this cold weather. Hoping to recreate something similar with the masses of stilton I seem to have accumulated in my fridge!

Or any other good stilton recipes?

Off to make something with brie and chicken for dinner....

Just crumbling Stilton into a soup at the end of cooking will work, so any soup like brocolli, parsnip, potato or even sweet potato would work well.

on bbc good food magazine website, there is a soup with stilton, it's Leek, we had it at Christmas, very nice.

I made a lovely celery and stilton soup the other day:

Fry a chopped onion in a knob of butter. Add a whole head of celery, washed and chopped. Sweat gently until translucent. Add liquid to cover - half stock (veg or chicken) and half milk. Simmer about 20 mins till veg tender. Liquidise. Add more milk (or cream) to achieve desired consistency. Grate in a lump of stilton - about 3oz or so is about right. You can add crumbled pieces and chopped celery leaves to the top of the soup for prettiness if you like

mmmmmmmmmmmm.....

Stilton freezes ok by the way if you have masses!

Like the thought of celery and stilton, but DH hates celery. May try the leek though.

Didn't realise you could freeze it too - might throw a couple of blocks in the freezer rather than killing myself eating it all this week!

my DH hates celery too (he calls it Satan Sticks ) but he loved the celery soup!

yeah someone today said they made a celery and stilton soup yesterday they said it was divine....
