Using up leftovers - Help needed!

Has anyone got any bright ideas for what to do with the mountain of veg in my fridge? I've got:

1 cauliflower
3 sprouts of broccoli
1 pack of green beans
4 peppers - 2 red, 1 yellow, 1 green
a big bag of carrots
a big bag of sweet potatoes and normal potatoes
a bag of onions
2 bulbs of garlic
loads of tomatoes
2 parsnips

Any good recipes for ratatouille or veg soup / casserole? or any other tempting ideas?

I also have some chicken breasts to use up, plus loads of rice / pasta etc

oooh you can make a fab soup all orangey and antioxidant filled! Did you freeze any stock from boiling up your turkey carcass? If so use that.
Get a great big pan.
Fry 3 onions and a couple of garlic cloves slowly and gently til they go soft and transparent it takes longer than you think to do it properly but is worth it. Now some tomatoes. Chop the carrots, parsnips and sweet pots onto large chunks and throw them in you need loads. Put the lid on and gently cook for 15 mins. Add some stock if you have it or use a cube. Throw in some herbs, parsley preferably. tip in some red lentils and lots of water and simmer for 30 mins or so. Whizz in the liquidiser. Do add the peppers too with the toms just the yellow and red. It will be yum, i made it for lunch today

oh lots of nice stuff,

stir fry with the fresh veg

roast off some of the root veg with meat or fish

oven roast tomatoes at same time and then make tomato sauce for pasta add anchovies or roasted peppers
