what can i do with my leftover ham?

any good recipes or ideas?

i cooked nigella's ham in coke last night and it's truly lovely, but lots of leftovers. any suggestions?

Ooh yes, chicken and ham pie in a lovely thick white sauce, made with Delia's easy flaky pastry. Delish. My mum used to make corned beef and potato risoles served with ketchup

Delia has another recipe called Ham Hash Cakes (!) with Parsley sauce. It's in her Christmas recipe book.

Nigella does a lovely pasta dish in the Feast book - using left over ham and peas in a creamy sauce served with pasta.

She recommends it for children but I really like it as well.

Cook some pasta and a few minutes before the end chuck in some frozen peas to cook through.

in a saucepan combine some cubed ham, double cream and a splash of chicken stock concentrate (I use the knorr touch of taste ones) and let it bubble to reduce slightly. Drain pasta and peas and mix with sauce - slop on plates and serve.

I forgot to say that I am still using the leftovers of my ham that I cooked on Christmas eve. Coke has such preservative properties that I find the ham keeps for quite a few days in the fridge.
