Can anyone help me please. I tend to live on processed/convenience foods and it is starting to show! Need a really simple but tasty healthy eating plan that doesn't take hours to prepare. Any help much appreciated.

parsleysoup.co.uk have wonderful vegan recipes and very simple to make dishes.
or this here
Ideas would be scrambled egg on toast for brekkie - takes about 2 mins
salad and humus sandwhich for lucnh or homemade soup if you have 20 mins to spare, rice or pasta and homemade chilli/curry/ratatouille for tea. All takes less than 30 mins and is easy to follow
I can whitter on for hours so ask me specific stuff

Thanks coffee, will look at that. I need to eat more veg but I find it quite bland, also would like ideas for simple fish dishes.

tuna and sweetcorn bake? I've never eaten fish but I've seen that recipe about.

Salmon fillets with new pots and peas.

Put salmon in some foil, add a slice or 2 of lemon, a couple of slivers of garlic, wrap foil into a parcel and bake in oven for 15/20 mins. Serve with pots and peas.

Or you can grill it and add some basil butter (butter, fresh basil and lemon juice all creamed together)

Cod fillets. Put some dots of butter on fish, a dash of white wine, slivers of garlic and bake in foil as before.

These are from Nigel Slater's 'Real Fast Food' which I thoroughly recommend.

Mercy, that sounds really nice, thank you. Will check out the book from the library.

Prawn or chicken stir fry? Bit of oil in wok, slivers of fresh ginger, chopped garlic and chilli, sliced pepper / mange tout / sweetcorn / spring onions / whatever you've got / slosh of oyster sauce. Serve with rice or noodles and Bob's yer uncle and Fanny's yer aunt.
