Beef joint recipe, delicious!

I found this on the internet and it was delicious, need to share, even 3 year old ds liked it.

Beef joint (boneless) about 3lbs (well thats what I had and was looking for inspiration)

fry 4 slices of bacon until crispy. ( i used smoked)
add 3 large onions (sliced) and 2 large shallots (sliced).
Fry until caramalised (about 10 mins)
Add 6 cloves of garlic (crushed) and 2 dried bay leaves and about 3 sprigs of fresh thyme and cook for about another minute.

Put this mixture in the bottom of your roasting tin.

Seal off your beef joint in a frying pan.

plop on top of the mixture.

chuck in a bottle of ok red wine and half a cup of red wine vinegar.

bung in the oven according to how long beef needs to cook (mine was just under 2 hours at gas 5)

After this, i removed the beef and boiled down the sauce as it was very liquidy (about 20 minutes)

this made it a lot thicker and a lovely accompiament to the beef.

A roast with a difference, was absolutely delicious. I cannot cook very well and this was worthy of a restuarant!

It was a topside beef joint, they are half price in asda just now.

Sorry that should be plop 'beef' on top of the mixture. that could be interpreted very wrongly
