Cous Cous

Right ho, I'd like to learn how to make cous cous into something more exciting.

I'm in Sydney and for Christmas lunch we had a picnic which included a cous cous with pumpkin and another one which was a sun-dried tomato cous cous salad. I bought them both at David Jones food hall (a department store).

The one with pumpkin also seemed to have mint in it and both seemd to have oil/lemon juice.

I seem to remember there's a brilliant Delia recipe for a roast veg cous cous salad but it's not in any of my books.

Can anyone share their recipes with me??

well, all that you have just said, plus use stock in stead of water in your cous cous, plenty of butter and olive oil. De-seeded chopped tomatoes, finely chopped spring onions and olives.

Leave it in the fridge over night and bring it up to room temp or under before you serve it. Mate.
