You can freeze then until a time you can be bothered to make turkey soup.

Biggest pan you own. Put bones in. Cover with hot water. Add any left over gravy. Bubble away for 2-3 hours. Worry about what to do with it later

make the soup as condensed as possible so it will take up as little freezer space as possible.

so have found biggest pan
carcass
onion, carrot, leek, pepper corns garlic
simmer for 3 hours ( so far) will leave for another hour or two I think

then - ummmmmm not sure what I will do with it

DH has boiled up (some of) the bones (still half a turkey left here), and we'll be having turkey risotto made with it tonight.

califrau - yout dad sounds like a man after my own heart . I think soup is miraculous stuff - culinary equivalent of the compost bin. Make it out of anything.

if you can be arsed to do this try roasting them before boiling them - it makes a much better stock.

We had turkey soup for dinner - and it was very very nice (though I say so myself). Two more lots to be frozen for another time and that's it - enough with the turkey now, might have a takeaway tomorrow Feel like I've done nothing but cook since Monday.
