One pot dishes that don’t have tomatoes as a base?

Per the title - any ideas? I’ve had to cut out tomatoes due to reflux, and it feels like a lot of the meals we used to eat are now off menu. Previous staples included:

Chilli
Spaghetti bolognese
Sausage and butter bean casserole
Chickpea curry (I did try this with coconut milk and it was okay-ish)
Chicken and chorizo stew - that might work as a traybake with chunky veg and potatoes, maybe?

Onions aren’t great either, but I have found celery works as a decent sub. I’ve just had my medication increased by the GP so hoping this isn’t permanent, but any ideas would be much appreciated!

Following for reflux too! Some great ideas here. Roasting peppers and blending to substitute is genius.

Chicken and bacon stew. You could omit the 2 tablespoon tom puree as its not really much considering the quantity it makes

Chicken chasseur. I make mine with home made chicken stock. Chicken thighs, onions, garlic, button mushrooms, tomato purée, pancetta all need frying but you could do that in the saucepan thus making it one pot? Deglaze with white whine, add carrots and celery and just enough strong stock to cover, tarragon thyme S&P and simmer for one hour so it goes all concentrated and brown. Mmmm.

Over the weekend I have done Beef stew. (I use tomato purée in mine but you can omit it) and Cottage pie in the slow cooker and Last week a chicken a and veg tray bake with garlic and smoked paprika

Paella

I do a chicken stew that is v basic and goes down well. Browned off chicken leg/thigh pieces. Then cook onion (use celery or whatever base you like frankly). Add fennel seeds, a star anise and a stick of cinnamon, a splash of white wine. Replace chicken and add chunks of carrot and top with stock so that the chicken skins are not completely covered. Season. Cook in oven at 150 fan for about 90 minutes, then add a tin of white beans and return to oven for 30 minutes (or use slow cooker - high for 4 hours, low for 8).

You can thicken the sauce on the stove top if you want, adding some cornflour. Or just do a little gentle mashing to get some of the beans to thicken or. Or add a dollop or two of creme fraiche/greek yogurt. Whatever you prefer.

I'd be looking into tray bakes in your position - chicken in particular with veg/potatoes etc.

Texas style chilli doesn’t have tomatoes in it. The sauce is made of chillis.

Hunter's chicken, basically chicken stew with mushrooms and a creamy sauce.
Hot pot type recipes don't generally include tomatoes. Perhaps look up some more traditional old fashioned recipes, chicken stew, braised beef casserole, Irish stew, sausage and winter vegetable casserole., they wouldn't contain tomatoes.

Just popping back to this thread to say thank you so much for all the amazing suggestions. I have bookmarked a load of recipes, and also agree that stew/traybake type things are a good shout. I’ve also stuck lentils on the next online shop to do a big batch of lentil and bacon soup.

@MoiraNotRuby that looks interesting but is properly ££ - I think it must be imported? I am going to have a look in our local health food shop to see if they have it or something similar to avoid paying postage if possible.

I stayed with a family in south India for a while. I was told that traditional cities used tamarind or tamarind paste before tomatoes were imported. You can get tamarind paste on Amazon

You can make nomato sauce. It’s got beetroot in it.

Posting this link as it includes advice on how to adjust the recipe for smaller volumes if you don’t want to do a whole chicken. I cook both the full and reduced versions regularly and it always turns out really well. Only takes 10 or 15 mins to prepare and it’s very forgiving if you end up leaving it in the oven for an extra 15-30 minutes because your toddler won’t go to sleep!
